Melon and Mozarella Salad
We had this along with grilled mushrooms and sauteed spinach for dinner last night. It's cooling and refreshing after a long day in the sun. It has a great salty-sweet combination.
1 cantaloupe, balled or cut into 1" chunks
8 oz fresh mozzarella balls
juice from one lemon
sliced prosciutto or vegetarian pepperoni
1/4 chopped fresh mint
salt and pepper
Combine all ingredients and serve immediately.
